First opened in 1944, Lina Stores is known for its fresh, handmade pasta, meats, cheeses, antipasti and many more products — all imported from Italy! Guests can enjoy our Italian dishes in our restaurant and take away the ingredients from our deli to recreate their Italian feast at home. We also have an online shop which allows customers to order online quickly and easily with seamless deliveries straight to their front door. All of this of course requires preparation, which is all done in our very own Lina Cucina in Peckham, where we develop our high-quality Italian recipes.
WHAT ARE YOUR MAIN DUTIES?
As a Head Pastry Chef at our Lina Cucina in Peckham, your primary responsibility is to lead the pastry production team in development, preparation, management of the section. You will utilize specialized kitchen equipment to create fresh and high-quality baked goods from scratch, ensuring consistency and excellence. Additionally, you will uphold excellent health and safety (H&S) and food hygiene standards, contributing to a clean and efficient kitchen environment.
WHAT ARE YOUR RESPONSIBILITIES?
Kitchen Operations:
- Lead and supervise the pastry team, including pastry chefs de partie, ensuring efficient workflow and high standards.
- Develop and refine recipes for traditional and innovative Italian pastries, ensuring consistency in taste, texture, and appearance.
- Accurately measure and weigh ingredients, ensuring minimal wastage and adherence to recipe specifications.
- Prepare and bake a variety of pastries, desserts, cakes, following standardized procedures.
- Operate kitchen equipment such as mixers, ovens, and proofers efficiently and safely.
- Properly handle and store ingredients, including picking up items from the walk-in fridge and maintaining appropriate temperature controls.
- Assist in maintaining inventory levels, including checking stock and reporting shortages or issues.
Quality Assurance:
- Ensure all products meet the established quality and taste standards before they are distributed.
- Follow detailed recipes and menu specifications to maintain consistency across all batches.
- Adhere to portion control guidelines to ensure consistent serving sizes and minimize food waste.
Health & Safety:
- Comply with all health and safety regulations, ensuring all food is prepared in a clean and sanitary environment.
- Maintain cleanliness of the workspace and equipment, following all cleaning schedules and protocols.
- Follow all safety protocols, including proper use of kitchen equipment and handling of hot or hazardous materials.
YOU MUST BE:
- A culinary professional with extensive experience in large-scale pastry production, preferably in an Italian cuisine setting.
- Capable of accurately following recipes and maintaining high standards of quality and consistency.
- Able to lead and mentor a small team in a fast-paced production kitchen environment.
- Skilled at maintaining an orderly workspace and managing time effectively.
- A collaborative team player who communicates effectively and supports colleagues.
