The Department of Corrections, Division of Institutions, is currently recruiting for a Food Service, Lead for the Yukon Kuskokwim Correctional Center (YKCC) located in Bethel, Alaska.
What you will be doing:Under the supervision of the Food Service Supervisor, the Food Service, Lead is responsible for managing the daily work of the food service operation at the Yukon Kuskokwim Correctional Center (YKCC), which also provides meals to the Bethel Youth Facility. The primary function of this position is to provide direct supervision and instruction to approximately 25 inmate workers, preparing and serving meals, while ensuring appropriate sanitation, safety, and security of the kitchen.

The working environment you can expect:The Yukon Kuskokwim Correctional Center (YKCC) is a multi-function, state operated adult correctional institution. The institution has a capacity of 220 male and female inmates and employs a staff of 51. The facility serves both as an intake and a short-term facility. At any given time, 75% to 85% of the population is composed of inmates in pretrial status.
Who we are looking for: The ideal candidate will possess the following strengths, skills, and abilities:
- Knowledge in the practice, methods and procedures of volume food preparation, cooking times and serving temperatures
- Knowledge in food handing, storage and rotation techniques, to avoid cross contamination and recognize critical control points
- Knowledge in regular or modified diets/menus, content and limitations
- Ability to use dietary instructional manuals
- Ability to plan and prepare meals for transport to inmate housing mods
- Knowledge of kitchen machinery, tools, equipment etc…
- Ability to follow institutional Policies and Procedures and Standard Operating Procedures
- Adhere to Security Guidelines set forth by the Institution
*Ability to obtain the ServSafe: Food Protection Manager Certification.
