The goal of the Sous Chef is to manage a specific department and work with the Executive Chef and/or Executive Sous Chef to create, implement and maintain quality standards. In some instances the Sous Chef will be expected to be responsible for the entire operation in the absence of the Executive Sous Chef and/or Executive Chef. The ideal Sous Chef will accomplish their tasks by monitoring the daily functions of the culinary department, including providing support and guidance to the culinary team, ending in a positive guest experience. The salary range for this position is $68,640 - $73,444 . This is the pay range for this position that Hyatt Regency Indian Wells reasonably expects to pay. Decisions regarding individual salaries will be based on a number of factors, such as experience and education. Ability to relocate for advancement opportunities in the future Teaching hotel where you can learn from some of the best in the business Responsibilities include: Support senior leadership by developing and assuming basic management responsibilities Assume the role of liaison between all departments within the culinary division and all other hotel departments Supervise the preparation and cooking of various food items Develop and implement creative menu items that adhere to Hyatt brand standards Plan, coordinate & implement special events and holiday functions Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs Lead and coach the team towards achieving exceptional guest service and employee satisfaction results Monitor food production, ordering, cost, and quality and consistency on a daily basis Ensure proper safety and sanitation of all kitchen facilities and equipment Qualifications: Riverside County Food Handler's license. Knowledge of safety procedures, including safe temperatures at which ingredients must be kept, and to which food must be prepared to avoid foodborne illness Ability to work as part of a team, collaborating on complex dishes Interpersonal skills to interact with a variety of other people, such as wait-staff, dishwashers, management and sometimes customers Calm demeanor to work in a high-stress, fast-paced environment Accountability for the dishes they prepare measuring up to the expectations of management and customers alike Comprehension and organization to follow direct orders and recipes Correctly prepare dishes to the standards of the restaurant Manual dexterity and hand-eye coordination to handle tools, such as knife techniques for chopping, slicing, cutting and dicing Ability to stand in one place for hours at a time, handle extreme heat and work shifts Good physical stamina to stand and walk long distances throughout shift.
